What is Halloumi?

Halloumi (or haloumi) is a white, semi-hard Cypriot cheese that is distinguished by its salty flavor since it is made from a bled of goats' or sheep's milk – sometimes even cow's milk.

Once cooked, it becomes less savory and takes on a squeaky texture, while retaining its shape. As it has a high melting point, halloumi is an excellent cheese to grill or bake as it does not melt.

Instructions

Cut the halloumi block into strips. This will be the size of the fries so make them a little thicker or thinner depending on your preference.

In a small, shallow bowl, mix the flour and paprika.

Roll the Halloumi in the flour, coating them completely. and setting them aside on a clean plate while you work. Heat the oil to about 350 ̊F in a medium sized skillet. Working in batches so as not to overcrowd the pan, fry the halloumi for about 2 minutes on each side or until the fries are golden.

Remove from the oil and move to a paper towel to absorb some of the oil. Serve the fries while hot alone or paired with a dipping sauce. Enjoy!
