It takes less than 15 minutes to make, which makes it ideal if you're in a rush but don't want to sacrifice having a few healthy vegetables on the dinner table. How to Make Grilled Zucchini

Preheat your grill on medium-high. Cut zucchini in slices.

Combine olive oil, red wine vinegar, parsley, basil, and garlic powder in a large bowl.

Add the zucchini and toss to coat. Add salt and pepper to taste.

Lightly oil the grill. Place the zucchini on the grill, cover, and cook for 2 to 3 minutes on each side.

Notes

Medium-sized zucchinis work best for this recipe. Smaller zucchinis should be cut slightly thicker than medium ones.
