Light, healthy, and oh-so-perfect for summer, grilled zucchini is the easy-to-make side dish that needs to be on your radar. It takes less than 15 minutes to make, which makes it ideal if you're in a rush but don't want to sacrifice having a few healthy vegetables on the dinner table. This grilled zucchini recipe calls for dried herbs, but you could just as easily add fresh herbs from your garden for a more vibrant flavor. Give it a try the next time you fire up the grill!
Preheat your grill on medium-high. Cut zucchini in slices.
Combine olive oil, red wine vinegar, parsley, basil, and garlic powder in a large bowl.
Add the zucchini and toss to coat. Add salt and pepper to taste.
Lightly oil the grill. Place the zucchini on the grill, cover, and cook for 2 to 3 minutes on each side.
Remove the zucchini from the grill when tender, season with more salt and pepper if needed. Serve immediately.
– Medium-sized zucchinis work best for this recipe. Smaller zucchinis should be cut slightly thicker than medium ones.
– Grilled zucchini is best enjoyed straight off the grill. This way, they're still perfectly crunchy with just the right amount of tenderness.
– There are plenty of condiments you can serve with grilled zucchini. Try it with sauces like yogurt herb, garlic, tahini, barbecue, or peanut sauce. This light side dish also tastes amazing with a simple squeeze of fresh lemon juice.
– Make sure your grill is nice and hot before you oil it.
