Grilled spiced king prawns is a fish recipe that is quick and easy to make; a recipe with a delicate and tasty flavor at the same time, thanks to the use of a delicate ginger-flavored oil and the quick cooking on the griddle. An original dish to be composed with a few simple ingredients; you can also accompany spiced grilled king prawns with a side dish of stewed leeks and potatoes, in order to have a complete, well-balanced and tasty course.
Clean the king prawns; rinse them under running fresh water and dry them. Then take one king prawn at a time and remove the head with a clean cut. Insert the tip of a toothpick into the second hump of the carapace and gently extract the pulp (1).
Pour about 80 ml of oil in a clean bowl. Then clean the tip of the ginger root and grate some in the bowl (2). Cover with plastic wrap and let it rest for about ten minutes.
Peel and wash the leek and potatoes. Finely slice the first and cut the second into cubes (3). Then sauté both with a drizzle of oil in a non-stick pan. Then add a glass of water, salt, pepper and cook gently with the lid keeping a vent. Turn the flame off when the vegetables are cooked.
Heat the griddle very well (preferably in cast iron) and arrange the king prawns. Sprinkle them with a little ginger-flavored oil and add a few leek sticks (4). Then turn the king prawns and cook them on the other side, sprinkling them again with ginger-flavored oil. Remove the king prawns from the heat and serve with the leek and potatoes.
For a perfect result we suggest you to use a cast iron griddle or pan which, well red-hot, will help to obtain a juicy and well-cooked fish, not dry at all. This is because cast iron tends to evaporate liquids quickly avoiding stagnation on the bottom, thus promoting rapid cooking without "boiling effect".
It is preferable to consume the dish immediately, in order not to let the king prawns lose their consistency. In any case, the spiced grilled king prawns can be preserved tightly closed in an airtight container for 24 hours.
