Grilling pineapple slices is so easy and quick, and it makes the flavours more intense. You don’t have to have an outdoor barbeque to enjoy these delicious treats – they’re just as easily made indoors on a ridged griddle pan on your stovetop.

Cut three thick slices of pineapple. Whisk rum, brown sugar, cinnamon powder, vanilla extract well in a large bowl.

Add the pineapple slices and soak in the rum and brown sugar liquid for at least 30 minutes. You can also leave it to soak overnight for a more intense flavour.
Heat up the grill pan. Coat the pan with some oil or butter using a paper towel. Place rum soaked pineapple on hot grill, cook for 3 to 4 minutes on medium heat.
