Hold off on using the deep fryer – pan-frying your fritters is the healthy way to go. It also uses much less oil, which means you won't wind up with sodden fritters. Grate the whole unpeeled zucchini with a box grater. Place the grated zucchini into a colander and add salt. Let it sit for about 10 to 15 minutes, then squeeze out the water.
