Greek butter Christmas cookies: the delicious traditional cookie recipe

Salted butter
100g, softened to room temperature
Small egg
½, lightly beaten
Almond extract
1 teaspoon
Powdered white sugar
1½ tablespoons
A pinch of baking soda
Flour
1 cup
icing sugar or powdered white sugar
1 tablespoon, to coat the cookies

You must try out this super-duper simple cookie recipe that is native to the Greeks. These super delightful treats can become your tea time favorite in no time!

As the name suggests, these Greek butter Christmas cookies have the lovely drool worthy buttery flavor and are slightly crunchy on the outside but soft and rich inside.

Surprisingly, these cookies turn out soft at the center and not dense, even when practically no rising agent is used. And above all of that, these cookies are light on sweetness. You may make them further less sweet by not coating them in the sugar dust!

Instructions

Preheat the oven to 175 degrees C and prepare a baking tray by lining it with a butter paper. Beat the butter for at least 6 to 7 minutes or until it is pale and fluffy in texture. Add the beaten egg and almond extract to the butter. Whisk everything again until the mixture is well combined.

Add 1½ tablespoons of powdered sugar, baking soda, flour to the butter mixture and slowly beat everything until just combined. Use hands to gather the dough together and then take a small walnut size portion of the dough. Roll the dough in to a log of about 2 inch length.

Now, place the dough log over the butter paper while shaping it in to a crescent shape. Repeat with the remaining dough mixture and bake for about 10 minutes or until the cookies are pale brown in color. Cool the cookies thoroughly and then roll them all in the icing sugar. Serve and enjoy!

Tips

Use an electric blender or beater to beat the butter. Crack open the egg carefully and make sure to not add any eggshell to the recipe. You may add a tablespoon more of the dry flour if the dough turns out very sticky. Do not over knead the cookie dough. Maintain the baking temperature and you might need to keep a watch on the cookies in the final minutes of baking.
