Fruit ice cream is a delicious dessert, perfect to be enjoyed as a snack with the whole family or serve it as a refreshing dessert at a dinner with friends. It's a smart recipe that will allow you to prepare one of the most loved desserts of all time, instantly and without the aid of an ice cream maker.

In fact, to do this, you will only need frozen fruit of your favorite variety, Greek yogurt and icing sugar: these, blended together in a food processor, will magically transform into a very creamy mixture, to be placed in artisanal cones, or individual cups, and enjoyed immediately without having to wait even a minute. Yogurt, in addition to giving the ice cream the right softness, will allow you to mix the ingredients more easily; if you have a professional blender with very powerful blades, you can also omit it from the preparation, or you can replace it with a drop of liquid cream.

Here we have prepared two different flavors, one with on blueberries and blackberries, and one with strawberries but, of course, you can use your favorite variations also depending on what you have available at home: mango and banana, peach and apricot, pineapple and cherries… The only precaution, for an optimal result, will be to cut the largest fruit into cubes, before putting it in the freezer, to ensure a smooth and velvety texture.

Those who wish can garnish the ice cream with a topping of their choice such as whipped cream, crumbled meringues, crunchy wafers, fresh fruit, chocolate chips, while for a lighter alternative, you can completely eliminate sugar or use agave syrup, honey, stevia or erythritol instead. In any case, besides the doses supplied by us, keep in mind that, depending on the degree of ripeness of the fruit, the ice cream will be more or less sugary.

How to make fruit ice cream

Take the strawberries out of the freezer (before putting them in the freezer for at least 8 hours, don't forget to peel and dice them).

Collect them in the bowl of a food processor.

Add the yogurt.

Sweeten with icing sugar.

Blend everything well, until you get a creamy and homogeneous mixture.

To make the blueberry and blackberry ice cream: take the berries out of the freezer.

Transfer them to the blender with the yogurt.

Finish with the icing sugar.

Blend carefully until you get a mixture of the right consistency.
