Fluffy Pancakes: the fun breakfast recipe with a chocolate cube surprise

They may look unassuming from the outside, but these fluffy pancakes hide a sweet surprise…Each pancake is filled with a block of sweet milk chocolate! A light and easy breakfast that can be served plain or with maple syrup.

To make these fluffy pancakes, you will need flour, eggs, sugar, milk, baking powder, vanilla, and milk chocolate (our secret ingredients!). Simply whip up the batter, pour it into the pan, add the chocolate blocks, and cook until golden brown and fluffy! Don’t feel like having these for breakfast? Turn it into a dessert by adding a scoop of ice cream and a sprinkling of chocolate vermicelli.

Fluffy Pancake Ingredients

Flour – All-purpose flour will work with this recipe. Use gluten-free flour if you can’t consume gluten. Alternatively, use a combination of all-purpose flour and wholewheat flour.

Sugar – the sugar sweetens the pancake slightly

Leavening agents –baking powder gives rise to the pancakes.

Eggs – the eggs add rise to the pancakes

Milk chocolate – choose any milk chocolate that is easily divided into blocks (see below for substitutions)

Tips

For a quick alternative, you can use Bisquick for the pancake batter. Simply mix together 2 cups Bisquick mix, 1 cup milk, and 2 eggs. Proceed with the recipe as stated, adding the chocolate blocks while cooking the pancakes.

For a vegan pancake batter, whisk together 1 cup of flour, 2 tablespoons of sugar, 1 tablespoon of baking powder. ½ tsp salt, 1 cup almond milk, 1 tablespoon apple cider vinegar, and 1 tsp vanilla extract. Use dairy-free chocolate blocks.

Don’t make the pan too hot, instead cook over medium heat. If the pan is too hot, the batter will cook before it spread completely to the sides.

Use a pastry brush to coat the pan with a thin layer of oil. You don’t want it to be too greasy. Use a non-stick pan for the best results!

If you prefer the pancakes less sweet, use less sugar, and use dark chocolate instead of milk chocolate.

What To Serve With Fluffy Pancakes

Serve the pancakes with freshly whipped cream, chocolate sauce, honey or maple syrup, or caramel sauce. A sprinkle of nuts will round off these chocolatey pancakes perfectly.

How to Store Fluffy Pancakes

Store the fluffy pancakes in an airtight container in the fridge for up to 4 days. You can also freeze the pancakes. Once cooked and cooled, wrap them tightly in plastic wrap. Allow them to thaw in the fridge, or warm them in the microwave.

Instructions
