These Honey Fritters are sweet vanilla-flavoured pan-fried cakes that are incredibly fluffy and delicious drizzled with honey. Similar to other types of pancakes, they are wonderful for breakfast but they require a little pre-planning since they contain yeast rather than baking powder or baking soda.

The first step to making these honey fritters is combining flour, semolina, sugar, baking powder, yeast, salt, vanilla sugar, and warm water in a bowl. Then, the mixture gets set aside for an hour to thicken. Next, the batter gets cooked in portions on the stove before being served. A drizzle of honey and a glass of milk is all you will need to make these fritters a complete breakfast!

What are Honey Fritters?

These honey fritters are flour and semolina-based fritters that are cooked in a pan similar to pancakes. However, unlike pancakes, they are leavened with yeast rather than baking powder or baking soda.

Despite being called honey fritters, they don’t actually contain any honey. However, when they are served, they can be topped with a drizzle of honey for a sweet contrast to the fluffy cakes.

Pro Tips

  • Make sure the water you use for the batter is warm but not too hot or else it will kill the yeast. A temperature of around 100 F to 110 F (37.7 C to 43.3 C) is perfect for activating the yeast.
  • The best yeast to use is instant yeast as it will dissolve into the batter easily. However, if you use dry active yeast, you should mix it with the water and allow it to sit for 5 minutes before adding it into the batter.
  • When cooking the fritters, you will know they are ready to flip when they appear golden around the edges and bubbles start forming on top.
  • If you prefer not to serve these fritters with honey, you could also serve them with maple syrup.

What to Serve with Honey Fritters?

These honey fritters can simply be served with honey drizzled on top along with a glass of milk or a cup or tea or coffee. However, if you would like to make them more special, you could also dollop them with whipped cream or add fresh fruit on top like sliced bananas or peaches, or fresh berries.

What if I Can’t Find Vanilla Sugar?

If you can’t find vanilla sugar at the grocery store, you can simply replace it with regular sugar and some vanilla extract.

Can I Replace the 00 Flour with All-Purpose Flour?

Yes, technically you can replace 00 flour with all-purpose flour but it won’t be at a 1:1 ratio. The rule of thumb is that for every cup of 00 flour that you will be replacing, you should use ⅔ cup of all-purpose flour.

What Type of Pan Should I Use for Honey Fritters?

You should actually use two different pans when making these honey fritters. One should be a 14 cm nonstick pan that will help shape each fritter while the other should be a larger pan where you can finish cooking the fritters.

How to Store Honey Fritters

These honey fritters can be stored in an airtight container or sealed bag in the fridge for up to 3 days. Then, when you are ready to serve them, you can either warm them in the oven or in the toaster.

They can also be stored in the freezer for up to 3 months.

How to Make Honey Fritters

In a large bowl, mix the flour with the semolina, sugar, baking powder, yeast, salt, vanilla sugar, and warm water. Cover it and allow it to rise for 1 hour.

Heat olive oil in a small 14 cm pan on the stove. Add some batter and cook it until it starts to bubble on top, about 1 minute. Transfer the fritter to a large pan to cook on the other side. Repeat the process to use up the rest of the batter.

Serve the fritters drizzled with honey.
