Empanada de manzana: the delicious Spanish apple pie recipe

Ingredients

Active Dry Yeast
3 teaspoons
Milk
½ cup, luke warm
whole egg
1 large
White sugar
1 teaspoon, powdered
A pinch of salt
Unsalted butter
2 tablespoons, softened to room temperature
Flour
2½ cups

1 large, peeled and sliced
Powdered white sugar
2 tablespoons

½ small, lightly beaten, for egg wash

Empanada de manzana is a truly delicious pie dish that has all the elements of the perfect apple pie, minus the heavy spices! In fact, it is kind of a summer version of everyone’s favorite apple pie.

The thing you would love most about this pie is it has a lovely gooey yet slightly crunchy apple filled center that is wrapped in the soft textured dough, which has the most lovely brown crust on the top!

Instructions:

Add the yeast to the luke warm milk and keep it aside for 2 minutes. Meanwhile, crack open the egg in a large bowl. To the eggs, add a teaspoon of powdered sugar, salt, yeast mixture, butter, and roughly mix everything. Add flour to this egg mixture and knead it in to a soft and smooth dough. Cover and keep the dough aside for about 20 minutes, or until the dough doubles.

Preheat the oven to 200 degrees C and lightly grease a pie dish. Divide the dough in to two unequal halves, one big for the base and small for the top. Lightly flour a clean rolling surface and roll the larger dough ball to ¼ inch thickness and large enough to comfortably cover the base of the pie dish. Pierce the dough several times with tip of the fork and arrange the apple slices over it.

Evenly sprinkle two tablespoons of powdered sugar of raw apples. Roll the second dough to a thin sheet large enough to comfortable cover the top of the pie dish. Cut off the extra dough hanging out from the pie dish and seal the top and bottom edges together beautifully. Pierce the top dough sheet several times as well and then bake the pie for about 30 minutes or until it has a nice brown crust on top. Slice, serve, and enjoy!

Tips

Make sure you move your hands in only one direction while you whisk or beat the ingredients. In case you use hand blender/whisk, again make sure that the gadget moves in one circular direction only. Be extra careful around the final minutes of baking so that the pie does not come out charred. Drizzle a tablespoon of your favorite jam over the raw apple slices before placing the top dough sheet, if you like the pies a bit on the sweeter side. Make sure that you carefully remove the egg shells while you break the egg. A wiser technique would be to break the egg in a separate bowl first and then use that broken egg for the recipe.
