Prepare the batter; pour the milk into a bowl, add the egg yolks (1) and mix with a whisk.
Add the type 00 flour, powdered yeast for cakes and a pinch of salt, passing them through a sieve (2), and mix until you get a thick batter.
Whisk the egg whites until stiff and gently add them to the batter (3); put in the refrigerator and let it rest for a few hours.
Peel the apples, cut them into thick slices and, with the help of a paring knife, remove the core (4). Transfer the slices to a bowl with cold water, acidulated with lemon juice.
