How to Store Apple Cinnamon Crepes

Once assembled, it is recommended to consume the apple crepes immediately. If not yet filled, you can store them in the refrigerator for 1 day, well covered with a clean cotton cloth.

How to Make Apple Cinnamon Crepes

Collect the sugar and flour in a large bowl.

Mix them with a whisk, then pour in the milk, continuing to mix.

Mix well, trying not to form any lumps.

At this point, add the eggs.

Mix again for a few moments with the whisk, so as to incorporate them perfectly.

Cover the bowl with a sheet of cling film and let the dough rest in the fridge for 15 minutes.

Meanwhile, peel the apples and cut the pulp into cubes.

Transfer them inside of a wide pan, and cover them with the sugar.

Then, add the cinnamon powder.

Stir them together, and let them cook over low heat for about 15 minutes, until the apples are tender but not falling apart. Remove from heat and set aside.

Take the batter out of the fridge and pour 1 ladle into a non-stick pan greased with a small piece of butter. Swirl the pan, so that the batter is distributed evenly.

Cook for about 2 minutes, then turn the crepe over and continue cooking for a few more moments, then transfer the crepe inside of a plate.

As the crepes are cooked, stack them on top of each other, so as to keep them soft and elastic.

Spread a thin layer of apricot jam on each crepe.

Spread the apple cubes over half of the surface.

Close the crepe into a half-moon shape and sprinkle it with icing sugar.
