Bread is a great way to stretch a meal and make it more satisfying. But why settle for plain bread rolls, when you can have Cottage Cheese Stuffed Bread? These bread rolls take some time to prepare, but you’ll be rewarded with a rich, tasty bread with a surprising filling that’s both creamy and light. It’s a delicious option for appetizers. Cottage Cheese Stuffed Bread is also great for eating as a side. Serve with a beef roast, pasta, or even just a simple salad.
The bread can be frozen, but the cottage cheese filling might separate on thawing. If you store it in the fridge, the bread will become dry. If you want to make it ahead, you can freeze it unbaked. Form the rolls, and place them on a baking sheet lined with parchment paper. Place in the freezer to harden. Once frozen, transfer to a plastic bag (or wrap in plastic wrap) and freeze again. To bake, place the rolls (frozen, not thawed) in the oven and bake until golden.
In a large bowl, mix together the yeast and sugar.
Add the milk, water, and oil and mix through.
Add the salt and half of the flour, and mix with your fingers.
Add the remaining flour and mix until a dough forms. Rest for an hour and a half.
In the meanwhile, make the filling. In another bowl, mix together the cottage cheese, chopped walnuts and spices. Stir to combine.
Turn the dough and on a floured surface and knead a few times.
Divide the dough into 4 equal pieces.
Roll out the ball dough, and add the prepared filling.
Carefully roll up the dough, making sure that the filling does not spill out.
Repeat with the remaining dough balls and place on a baking sheet. Allow to rest for 1 hour.
In a small bowl, mix together the oil, Greek yogurt, and egg yolk.
After resting the dough, use your fingers to create small indents in the dough.
Use a pastry brush to add the egg yolk mixture to the dough.
Sprinkle with white and black sesame seeds.
Bake at 180°C/350°F for 30-35 minutes until golden.
– You can add other fillings too. Try different cheeses (like mozzarella, cheddar cheese, and swiss) with fresh herbs. You can also add cooked bacon or smoke chicken pieces.
– You can turn this recipe into a dessert too. For the filling, add a mixture of cottage cheese, cream cheese, walnuts, chocolate pieces, and powdered sugar (optional). Omit the sesame seeds, but makes sure to still brush the bread with the egg yolk mixture. Top with powdered sugar.
