The biscuits in the pan are very tasty and do not require baking. You can prepare them very quickly and they can be flavored in many ways. At first glance it may seem strange that biscuits can be cooked in a pan and not baked, but this is a very convenient solution.
Prepare coffee. Put the sifted flour in a container (1), add the baking powder (2) and the powdered sugar (3).
Pour the coffee into the dough according to your preference (4) and add an egg (5). Knead the dough (6) first with a fork then with your floured hands. Pour some milk if the dough is too dry.
Form a ball and leave to rest in the refrigerator for half an hour (7). Meanwhile, put the butter to melt in the pan (8). Flour a work surface (9).
Roll out the pastry with a rolling pin and help yourself with your hands if it still looks too swollen (10). Place the biscuits molds on top and cut out the biscuits (11) which you will then cook in the pan (12), first on one side then on the other. Serve the biscuits cooked in the pan with a sprinkling of powdered sugar.
The recipe is perfect for preparing soft biscuits. As you will see, even if the dough is spread thin, the biscuits will tend to swell. That's why it's better not to make them too thick (you'll risk a badly cooking on the inside). If during the processing it seems that the dough is dry add the milk or, if you prefer not to weigh down the recipe, a little water.
