Coffee ice cream is a delicious dessert with a strong taste. With a particularly voluptuous and full-bodied consistency, it can be prepared using a base of milk and cream; for this reason the flavor is very reminiscent of that of a rich cappuccino. Healthy, genuine and invigorating, coffee ice cream is the best for a fresh and tasty snack or to be served at the end of a meal for a dinner with friends. Work the egg yolks until you will have obtained a light and frothy mixture (1).
Meanwhile, heat the milk and cream until it reaches about 85 degrees C; it should not boil, but only simmer slightly. Pour the milk and mix well (2).
Add the dextrose (3), continuing to mix.
Incorporate the carob seed flour and the coffee (4) and then mix everything carefully with the help of an immersion mixer.
Pour the mixture into a saucepan, put back on the heat and simmer for a few minutes (5). Turn off the flame, transfer to the refrigerator and let rest for a whole night.
Once the resting time has elapsed, pour the mixture into the ice cream maker (6) and let mix until you will have obtained an ice cream with a soft and creamy consistency. Once ready, transfer it to a tray and preserve it in the freezer.
When serving, distribute it in individual cups, garnish with coffee beans and serve (7).
Coffee ice cream can be preserved in a special container with an airtight seal in the freezer for at least 10 days.
