The cod patties are delicious fish balls that you can make small, for an appetizer or finger food, or like the normal patties, if you want to serve them as a second course. To prepare them, simply mix the cod fillets and the breadcrumbs with egg, grated Parmesan cheese, salt, pepper and parsley. Then pass them in flour and breadcrumbs and fry them in plenty of seed oil until they are golden brown. Finally, serve hot or warm: they will be delicious and crunchy and will also please children who usually do not like to eat fish.
Take the soft inside of the bread from the slices removing the outer rind. (1) Cut the cod fillets into small pieces, taking care to remove any bones. (2) Pass the breadcrumbs and the fish in the mixer. Then put them in a bowl and add the parsley, the crushed garlic, the grated Parmesan cheese, salt, pepper and eggs and mix well all the ingredients. (3)
Make small or medium-sized patties according to your needs (4) Then put them in the flour and breadcrumbs and fry in a pan with hot seed oil until they are browned. It will take about 3 minutes. (5) Once ready, lift them from the pan with a skimmer and place them on the kitchen paper to remove excess oil. Then transfer them on a serving plate and serve your warm or lukewarm cod patties. (6)
For a more crispy breading, pass the cod patties in cornmeal and breadcrumbs before frying them.
Those who prefer it, can bake the cod patties so they will certainly be lighter, but still tasty. Place the patties on a dripping pan lined with parchment paper, sprinkle with a little oil and cook at 180 degrees for 20 minutes, turning them at least a couple of times.
Variants
Alternatively you can prepare the cod and potato patties: in this case you can omit the bread crumbs. Boil 2 potatoes in plenty of water, peel and crush them. Add them in a bowl with the minced cod and the rest of the ingredients and proceed with the recipe. You can also add a handful of pitted green olives to make cod and potato patties even richer.
How to store cod patties
You can preserve the cod patties in the refrigerator for 2 days at most covered with transparent film or inside an airtight container.
