Coconut muffins are soft and delicious muffin recipe everyone will love. Super easy to make, these muffins are slightly crisp on top and soft, moist on the inside. You can make coconut muffins in no time and for any occasion, from breakfast to snack or dessert time.

They're made with a dough based on all-purpose flour, eggs, granulated sugar, and grated or desiccated coconut and coconut yogurt. Once baked, these delicious muffins are brushed with honey and finally sprinkled with more grated coconut. Serve them plain as they are or add a smooth glaze.

Tips for making Easy Coconut Muffins

To make coconut muffins even more delicious, you can also add chocolate chips, raisins, cinnamon, vanilla powder, lemon, chopped almonds or hazelnuts.

If you want an even more intense coconut fragrance, replace the vegetable oil with extra virgin coconut oil.

Instead of honey, you can sprinkle your coconut muffins with a cocoa spreadable cream, a nut butter or a chocolate glaze.

Ingredients

coconut, grated or desiccated

All-purpose flour
100 g
Coconut yogurt
160 g
Granulated sugar

Vegetable Oil

Baking powder for sweets

coconut, grated
Water
2 tbsp

How to make coconut muffins

Mix the egg and granulated sugar with a hand whisk.

Work everything until the mixture is semi-whipped.

Add the coconut yogurt.

Pour in the seeds oil (or the extra virgin coconut oil).

Incorporate the ingredients well.

Now add the baking powder for sweets.

Add the all purpose flour.

And then add also the grated coconut.

Mix everything with a whisk.

At the end you will have to obtain a homogeneous and rather compact mixture.

Transfer the dough into paper cups, placed in a muffin pan, and bake at 190° C (374°  F) for 15 minutes.

Once baked, take the coconut muffins out of the oven and let them cool.

Prepare a syrup of honey and water and brush it on the surface of the coconut muffins.

Sprinkle the coconut muffins with grated coconut.

Transfer the coconut muffins to a serving dish and enjoy.
