Looking for an easy, layered, no-bake dessert? Then this easy Chocolate Lasagna is just what you need. Unlike a traditional savory lasagna, this dish is easy to make and you only need a handful of ingredients. Creamy layers made from whipped cream, cream cheese, and chocolate pudding are spread on top of a crunchy Oreo cookie crumb base.
Except for the chocolate pudding which is made on the stove, the easy Chocolate Lasagna itself requires no baking. It’s served cold and is, therefore, the perfect dessert for summer. Because it requires a few hours of refrigeration, it’s perfect for making ahead of time.
Cookies – this recipe is made with Oreo biscuits.
Butter – butter is used to set the cookie crumb base.
Cream cheese – use a high-quality, full-fat cream cheese. For best results, use Philadelphia cream cheese. You can also substitute it with high-quality mascarpone.
Sugar – use powdered sugar; do not use granulated sugar as it will make the cream mixture gritty.
Cream – use full-fat whipping cream.
Chocolate pudding – you can also substitute it with vanilla pudding.
Prepare the cookie crumb base. Use a food processor to crush the cookies until it resembles fine crumbs (see recipe notes below for tips if you don’t have a food processor). Take some of the cookie crumbs and set them aside. You will use this later to decorate the cake before serving. Add melted butter to the rest of the crumbs. Press this mixture into the bottom of a glass baking dish. Store in the fridge while you prepare the cream and chocolate pudding layers.
To prepare the cream layer, whip together the cream cheese, 250ml of the whipped cream, and the powdered sugar until soft peaks form. Spread the cream over the cookie base and place the dish back in the refrigerator.
Prepare a chocolate pudding according to package instructions. Allow to cool. When the pudding has cooled, spread it over the first layer of cream. You can make the pudding creamier by whipping 50g of soft butter into it. Whip the remaining whipped cream and spread it over the pudding.
Sprinkle the cake with crumbled cookies and leave it in the fridge for a few hours before cutting and serving.
If you want, you can add more texture to the chocolate lasagna by adding another layer of cookie crumbs in between the layers.
For the crust, you can use vanilla wafers, crumbled leftover brownies, or graham crackers.
