The chicken with pine nuts is a main course that is easy to make, characterized by a tasty and creamy sauce, in which the marinade with greek yogurt and flavorings acts on the meat for a tender and aromatic result. Here, the pine nuts roasted in a pan give a pleasant crunch effect, as well as their characteristic flavor. It is a nice main course to serve because it is already portioned, which you can prepare using only the chicken legs, but also other parts of the chicken if you prefer. Follow our recipe and discover the surprising flavor of this dish.
Remove the skin from each chicken leg with the help of kitchen paper so that it does not slip out of your hands (1).
Collect the cleaned legs in a bowl, add the sliced spring onion and a few sprigs of rosemary (2).
Season with a pinch of salt, add the greek yogurt, a generous sprinkle of pepper and a drizzle of oil (3), then spread the dressing over all the meat. Cover and marinate for about an hour.
Heat the bottom of a non-stick pan and lightly toast the pine nuts mixing (4) until they appear golden brown. Remove from the heat and keep them aside.
Place the chicken legs in the pan without crossing them, add a drizzle of oil (5) and put on a high flame. Brown it by turning the meat with tongs. Then add the remaining marinade, half pine nuts and ½ glass of water. Put the lid on and cook for about 20 minutes on medium-low heat.
When the chicken appears golden brown and the cooking juices have almost dried, arrange it on a serving dish by adding a few sprigs of fresh rosemary and the remaining pine nuts (6).
Serve the chicken with pine nuts hot together with the whole cooking sauce (7).
For a light version, follow the same procedure using the diced chicken breast instead of the legs. You can also make the recipe with turkey, as an alternative to chicken.
For the success of the recipe use only Greek yogurt, which has the right consistency but also a touch of acidity decisive for the balance of flavors. Be careful not to burn the pine nuts, otherwise your recipe will have a bitter taste, in that case it is preferable to avoid putting them and toasting new ones.
