The chicken with mushrooms is a main course with a quick and tasty side dish, it is easy to prepare and it will please everyone. In our recipe we used chicken breast and portobello mushrooms, but you can also use different parts of the chicken or other types of mushrooms, such as porcini mushrooms. Making it is really simple: just pass the chicken breast in the flour, brown it in the frying pan with the onion, simmer it with white wine and then add the mushrooms, cooking it until all the flavors are well amalgamated, then flavor everything with a sprinkling of parsley. Once ready, the dish must be served very hot on the table, to taste it at its best in all its creamy goodness.

Clean the mushrooms with a damp cotton cloth to remove any remains of terrain and cut them into slices 4. Once the onion is golden brown, add the chicken and brown it on both sides. Pour into the frying pan the glass of white wine and let it simmer. Now add the mushrooms, cover with a lid and cook for 10 minutes: be sure the bottom is not dry, otherwise add a bit of water or vegetable broth. Finish cooking by adding salt and chopped parsley. 5 Blend to flavor for a couple of minutes. Your chicken with mushrooms is ready to be served and tasted very hot with its creamy dressing. 6
To reduce cooking time you can cut the chicken breast in small pieces: the small size will allow a much faster cooking. In this way, you can prepare the dish in a few minutes.
If you prefer you can replace the oil with butter and use garlic instead of onion, according to your personal tastes.
If you do not have fresh mushrooms you can alternatively use frozen mushrooms or dried mushrooms. If you use frozen mushrooms, first cook them separately to remove excess water, and add them to the browned chicken. Before serving, blend to season it for a few minutes.
If you use porcini mushrooms, reduce the quantity, as they have a more intense flavor compared to portobello mushrooms.
If you love spicy flavors, during cooking you can add a bit of curry, to give a truly unique flavor to your chicken with mushrooms.
You can keep the chicken with mushroom in the refrigerator in a hermetically sealed container, but just for 2 days at most. Before serving it, heat it slightly in the frying pan adding some oil, if necessary, and taste it very hot.
