Cauliflower Tacos: quick, easy and very delicious meal

Ingredients

Cauliflower
2 cups, chopped into small pieces
neutral oil
2 teaspoons, such as coconut or vegetable oil
Pinch of salt
dressing
2 tablespoons ranch
Hot sauce
2 tablespoons
Corn tortillas
4 8-inch, warmed
avocado
1/2, diced
Parsley
1 tablespoon chopped , to garnish
Ranch dressing, to taste

For a quick and easy meal, why not try these cauliflower tacos with a special buffalo sauce? Creamy ranch dressing is combined with hot sauce to give cauliflower pieces a taste sensation.

Pile the cauliflower on to tortillas and garnish with plenty of avocado, more ranch dressing and chopped parsley.

Instructions

Heat a skillet over medium heat, and add the oil and cauliflower. Cook, stirring frequently, until the cauliflower is tender and starting to brown, usually around 8 to 10 minutes.

In a small bowl, combine the ranch dressing with the hot sauce. Add to the pan with the cooked cauliflower and toss to coat everything thoroughly. Add more hot sauce if you like.

Remove the pan from heat until ready to serve.

In a dry skillet over medium-high heat, toast the tortillas until they are warm and show a few charred spots. You can also follow the cooking instructions on the packet for warming them in a microwave. Keep warm under a clean kitchen towel.

To assemble the tacos, divide the cooked cauliflower between the tortillas. Top with diced avocado, a drizzle of ranch dressing, and some chopped parsley.
