You can store cauliflower pizza bites in an airtight container in the refrigerator for up to 3 days.
Preheat the oven to 220°C / 425°F. Line a baking tray with wax paper. Grate the cauliflower finely and add into a microwave-safe bowl.
Softens the cauliflower in the microwave for about 4 or 5 minutes, then let it cool. Drain the cooked cauliflower, dismissing as much liquid as possible. Transfer the cauliflower in a large bowl and add the egg, mozzarella cheese, Parmesan cheese, basil, oregano, garlic powder and onion powder.
Stir all ingredients and season with salt and pepper to taste. Pour the cauliflower mixture on the baking tray, using an ice-cream spoon, until you have used all the dough, making a pizza shape. Sprinkle the pizzas with a little oil. Bake until the mini pizzas are golden, for about 10 to 12 minutes.
Retire from the oven, then pour some marinara sauce, and add the mozzarella cheese and the mini pepperonis on the pizzas.
Transfer the tray to the oven and bake until the cheese has melted. It will take about 3 to 4 minutes. Add some basil leaves and serve the cauliflower pizza bites. Enjoy!
