These super simple burrito bowls are quick to make and so much healthier and more delicious than fast food alternatives like the ones you'd get at Chipotle. While this is a vegetarian-friendly recipe, you could easily add meat for a hearty dinner that's packed with protein. Chicken, beef, and pork are all tasty additions you can try, but shrimp would be just as mouth-watering good. For a healthy dinner you can have ready in under half an hour, burrito bowls are the way to go!

Notes

  • If you don't have chipotle paste on hand, you can simply add two tablespoons of chipotle peppers in adobo sauce to the sour cream.
  • These burrito bowls are best enjoyed the same day, but it's a fast, easy recipe you can make in under 30 minutes.
  • You can swap white rice for brown or use quinoa instead for a more nutritious take on burrito bowls.
