Brussels gaufres, also called waffles, are delicious honeycomb-shaped wafers that are particularly popular in Belgium and France. Simple and very fast to prepare, they are prepared with a batter based on eggs, sugar, flour, milk and powdered yeast and then cooked in a special waffle maker that will make them crunchy on the outside and soft on the inside. Prepare them on Sunday morning and enjoy them over a slow and lazy breakfast, sipping a nice cup of tea or coffee. You can also sprinkle them with a little powdered sugar and accompany them with a homemade berries compote, as suggested in our recipe, or you can garnish them with maple syrup, spreadable chocolate cream, dried fruit in grains, whipped cream and everything that creativity (and greediness) suggests you. So let’s find out how to prepare them by following all our tips step by step.
Pour the milk into a saucepan (1) and bring it to room temperature over low heat.
In a large bowl, collect the egg yolks and granulated sugar (2), mixing well with the help of a whisk.
Add the sifted flour (3) and ½ teaspoon of powdered yeast for cakes, continuing to mix everything.
Melt the butter and then add it to the mixture (4).
Pour in the warm milk (5).
Beat the egg whites until stiff peaks and then gently incorporate them into the mixture, mixing with movements from the bottom up (6).
Collect the berries, water and sugar (7) in a saucepan, then put on the stove and cook for about 10 minutes. Meanwhile, heat your plate to cook the gaufres.
As soon as the plate will be hot, grease it with a drizzle of oil and pour the mixture until it will cover the surface (8), then close and let it cook for 6-7 minutes, making sure to monitor the cooking state of the gaufres.
As the cooking time will be elapsed, transfer the gaufres to a serving dish, sprinkle them with a little powedered sugar, garnish with a teaspoon of homemade berry compote and serve (9).
The gaufres can be preserved at room temperature for about 2-3 days, closed in a special container with hermetic closure.
