Broccoli Croquettes: healthy, light and super delicious

These broccoli croquettes are much like fritters. They’re easy to make and are a great way to sneak in vegetables to those who might otherwise not like the idea of having broccoli. These Broccoli Croquettes do take it up a notch.  Because they’re baked and not fried, they’re healthier than a typical croquette. But don’t think they lack taste. They are full of flavor, crispy on the outside, and soft on the inside. To make it, you will need broccoli, eggs, onion, parsley, and bread crumbs. You simply mix the ingredients together, shape them into croquettes, and bake. So easy, and so delicious!

How to Make Broccoli Croquettes

Cook broccoli in boiling water for 5 minutes, cool under rising water, then drain and dry with towel paper. Chop the broccoli finely.

Mix the broccoli with cheese, onion, egg, bread crumbs, parsley, salt, and pepper. Form croquettes and put them in a baking tin. Baking at 180°C/350°F for 15 minutes.

Tips

If you prefer a crunchier texture, spray the croquettes with oil before baking. You can also fry them in a bit of oil, this will make them crispier.

To make them meatier, add crispy bacon, cooked ham, or smoked and chopped chicken to the fritter mixture.

If you like a finer texture, you can process the broccoli in a food processor until fine.

Make sure to chop the onion finely. If the pieces are too large, the croquette won’t hold together.

To stretch the mixture (especially if you’re making it for a large crowd) feel free to add mashed potatoes.

The broccoli can also be cooked in the microwave (this works great if you’re short on time). Place the broccoli head in a glass bowl with a few tablespoons of water. Microwave for 1-2 minutes.

How to Store Broccoli Croquettes

Store leftover croquettes in the fridge for up to 3 days. Reheat in the oven, microwave, or Airfryer.

Can I Make Broccoli Croquettes in the Airfryer?

Yes, you can! Place the broccoli croquettes in the Airfryer basket and cook for 15 minutes at 400°F, turning halfway.

Can I Make It Ahead of Time?

The broccoli florets can be formed ahead of time. Place them on the baking sheet, wrap them with plastic wrap, and place them in the fridge until you’re ready to bake them. If baking them directly out of the fridge, add 5 minutes to the baking time.

What To Serve with Broccoli Croquettes

Serve these Broccoli Croquettes with sweet chili sauce, ranch dressing, or ketchup. Make your own chive dip, by mixing together ½ cup of cream cheese, ¼ cup of plain yogurt, and 1 tablespoon of chopped chives.

Lower the broccoli in a pot of boiling water and cook for 5 minutes.
