These broccoli croquettes are much like fritters. They’re easy to make and are a great way to sneak in vegetables to those who might otherwise not like the idea of having broccoli. These Broccoli Croquettes do take it up a notch. Because they’re baked and not fried, they’re healthier than a typical croquette. But don’t think they lack taste. They are full of flavor, crispy on the outside, and soft on the inside. To make it, you will need broccoli, eggs, onion, parsley, and bread crumbs. You simply mix the ingredients together, shape them into croquettes, and bake. So easy, and so delicious!
Cook broccoli in boiling water for 5 minutes, cool under rising water, then drain and dry with towel paper. Chop the broccoli finely.
