Ingredients

Tortillas
2 whole-wheat
Eggs
2 large
Salted butter
1 tablespoon
salt
1 pinch
Black pepper powder
1 pinch
Spinach leaves
2 cups
Cherry tomatoes
8, halved
Feta cheese
50g, crumbled

These breakfast wraps are the best, not because these are so healthy and delicious, but because these can be prepared in advance and wrapped safely for later use. You can wrap them in a clean paper wrapper or foil, store in the refrigerator, and just reheat them in a microwave whenever you wish to eat it. Just remember to eat them within 2 to 3 days of preparation.

Instructions

In a bowl, crack open the eggs and season it with salt and pepper. Whisk it well until well combined. Heat a non-stick pan and add half of the butter in it.

Pour eggs in it and then cook it until it coagulates. Remove the cooked egg in another bowl and add the remaining butter in the same pan.

Cook spinach in it until it wilts and fully cooked through. Place one tortilla on a clean work surface and then place half of the eggs, half of the spinach, half of the cherry tomatoes, and half of the feta cheese over it.

Carefully fold tortilla and keep it aside.

Repeat with the remaining ingredients and keep it aside. Heat the tortilla wrap either in the microwave or over a pan and then serve!

Tips

Tightly fold tortilla so that the filling doesn’t fall apart from it. In case you wish to eat it at the time of preparation, you can heat the tortilla first and then assemble fillings in it.
