The Breakfast Tart is a quick and easy breakfast or brunch option. It’s very satisfying and is perfect for those special occasions (like Valentine’s Day or Holiday mornings). With store-bought pizza dough, eggs, bacon, and cheese, you have everything you need to make a delicious, savory breakfast in no time. – Use store-bought puff pastry if you want an extra flaky crust. You can even use canned crescent dough.
– Make small breakfast tartlets or quiche tarts. Preheat the oven to 180°C and cut the pizza dough (or puff pastry) into smaller squares. Place the dough or pastry in the molds of a muffin pan and bake for 20 minutes. Add grated cheese and chopped cooked bacon. Finally, break open an egg in each mold. Cook for another 20 minutes until the egg is cooked through.
– To make a breakfast quiche: place the pizza dough in a tart pan and prebake for 20 minutes. Add diced sweet potato, sliced onion, and 2 handfuls of baby spinach. Top with cubed cheese and finish off with eggs whisked with a bit of milk. Bake until cooked through.

Roll out the pizza dough onto a baking sheet and use a spoon to press down the dough.
Add the eggs to the pizza dough, making sure to leave a space between them.
Sprinkle with grated cheese, and add the slices of cooked bacon.
Bake for 10 minutes at 200ºC (400ºF).
If you’re using puff pastry, you might want to precook the dough for about 15 minutes, otherwise, it will be undercooked.
