Oh my… this is such a filling dish that you certainly can’t have more than just once… I never thought that a vegetarian meal could taste so good and fill me up like an elephant!

It practically took no effort to enjoy a home cooked yet very restaurant style burger meal… something I always crave for. So, try out this vegetarian dish with heart healthy beans and fill up with high proteins and amazing flavors!

Instructions

Preheat oven to 180 degrees C, grease a baking tray and then line it with butter paper. In a large bowl, add the black and red beans. Finely mash the beans with a fork until it is smooth and pasty in consistency. Add the capsicum, red onion, garlic, to the mashed beans and mix everything until well combined. In another bowl, add the egg, hot sauce, tomato ketchup, red chili powder, cumin powder and mix everything until well blended. Add the egg mixture to the beans mixture. Put the bread crumbs to the beans mixture and mix everything until well combined.

Now, make four even sized patties of the beans mixture and place them in the prepared baking dish. Transfer the baking tray in to the preheated oven and bake the patties for about 15 to 20 minutes or until it browns evenly and turns crisp on the outside. Meanwhile, lightly brown the burger buns and spread mayonnaise evenly on one half of the bun. Spread tomato ketchup and mayonnaise on the other half of the burger buns. Place lettuce leaf over the bottom half of the burger bun, top it up with the baked black bean patty, cheese slice, onion slice, tomato slice, and finally place the upper half of the burger bun. Serve the black bean veggie burgers with hot fries and enjoy!

Tips

Maintain the baking temperature and you might need to keep a watch on the final minutes of baking. Make sure that you carefully remove the egg shells while you break the egg to be used for cooking. A wiser technique would be to break the egg in a separate bowl first and then use that broken egg for the recipe. Repeat if you need more than one egg for the recipe.
