These mini bites are the perfect way to use up refrigerated biscuit dough, and only take a few common ingredients to create something special. The softness of banana and peanut butter melds perfectly with the dough and dark chocolate drizzled over the top. If you really want to go all out, crumble some cooked bacon over them as well!
These bites are so easy to make, and you don’t even need a rolling pin – if you have a soft drink can handy, you can roll and cut the shapes out with it.
Preheat oven to 350F/160C/gas mark 4.
Using a soft drink can, roll each biscuit out and cut circles using the bottom of the can. You should be able to cut at least 6 from each biscuit.
Place a banana slice on half of the pieces of dough.
Spread about 1 teaspoon of peanut butter on the pieces without banana.
For each fritter, sandwich a peanut butter piece on top of a banana piece and pinch the pieces of dough together around the circumference, stretching the dough some if necessary.
The pieces of dough will try to come apart while they bake so it helps to tuck the seam part underneath as much as possible.
Place on a lightly greased baking sheet and bake for 10 minutes or until golden brown.
If desired, drizzle with melted chocolate and sprinkle with bacon.
In the UK you can’t buy refrigerated biscuit dough, but you can find recipes on the internet to make your own American-style biscuit dough.
