Use cleaned prawns. To clean, make a small incision in the back behind the head of the prawn. Pull out the vein, taking care not to leave parts of it behind. Leave the skin on for added flavor.
Make the marinade by mixing together parsley, garlic, lemon juice, extra virgin olive oil, and salt.
Place the prawns in the baking dish and sprinkle with the marinade and lemon slices.
Bake until cooked through and fragrant. Serve with your favorite dipping sauce. We like garlic aioli or sweet chili.
Bake for 13 to 15 minutes until golden. If you have a force-fan oven, you can turn down the temperature to 160°C.
Serve the baked prawns with the pan juices, aioli, fresh crusty bread, and extra lemon wedges.
Add a splash of wine for extra flavor.
Add cheese if you want. Sprinkle with parmesan, feta, or cheddar cheese 5 minutes before the end of baking and allow to bake and melt.
If you want more crunch, you can also mix Panko breadcrumbs with the cheese.
If you’re using frozen prawns, allow them to thaw in cold water first and then dry with a paper towel.
Store the prawns in an airtight container in the fridge for up to 2 days. Enjoy cold or heat in the microwave.
