This Baked Chicken Quesadilla recipe is a variation of the Beef Quesadilla one. It’s perfect for a crowd, as it’s made in a one-dish manner. Crispy fried chicken, ham, and Emmental cheese are layered and baked to golden, crispy perfection. It’s easy to modify, so you can add whatever you have in the fridge. A quesadilla is a Tex Mex dish. It consists of a tortilla filled with all kinds of meat, cheese, and seasonings. It’s then folded and cooked in a hot frying pan to achieve a beautiful crisp.
Chicken Breast – these will be breaded and fried to create delicious fried chicken for your filling.
Ham – this will be added to the filling together with your cheese.
Emmental cheese – what is a quesadilla without the cheese. This cheese is perfect and stretchy for the quesadilla as it melts while baking.
Tortillas – we used flour tortillas, as they get nice and crispy.
You first need to prepare your chicken breast. The chicken breasts are halved and pounded to thin them out. After breading the chicken breasts, they’re fried until golden. Together with the ham and cheese, they’re added in layers to the tortillas and then topped with another layer of tortillas. Greaseproof paper and a heavy baking dish are placed on top, to make sure that the ingredients bake and get nice and crispy.
– For this recipe, we used Emmental. But you can also use Monterey Jack, Mozzarella, or even mature cheddar.
– For this recipe, you cannot skip the oil, but you can use a bit less. Alternatively, you can use a cooking oil spray.
– To make it healthier, choose a lean cheese, and skip the breading step.
– If you want to make these Baked Chicken Quesadillas crispier, make sure that all the ingredients are cooled to room temperature.
It’s best to eat these Baked Chicken Quesadillas right away, but you can store them in the fridge for up to 4 days. Just make sure to store them in an airtight container. Reheat in the microwave or the oven for a crispier option.
Butterfly the chicken breast by slicing it in half.
Use a wooden rolling pin to flatten them.
Set up a breading station with flour, breadcrumbs, and whisked eggs.
Dip the chicken fillets in flour, then the egg, then the breadcrumbs.
Fry them in oil until crisp and cook, and then set aside in a warm place.
Place the tortillas on a baking sheet to make a rectangle. Top with slices of Emmental cheese.
Lay the pieces of fried chicken on top and cover with ham and then another layer of Emmental cheese.
Top with another layer of tortillas, cover with greaseproof paper and top with with a heavy plate, and cover with wax paper.
Place more tortillas on top and cover with greaseproof paper and other baking sheets. Bake for about 20 minutes at 180°C/350°F until the cakes are crispy.
If you want super crispy quesadillas, make sure that the chicken breast cools down completely before adding it to the tortillas.
