Baked breaded mozzarella cheese is the light version of the second course typical of the Neapolitan culinary tradition. A poor and easy to prepare dish that combines the softness of the mozzarella cheese with the crunchiness of the bread that surrounds it. The original recipe recommends frying as a cooking method but the baked version is an excellent solution for those who do not want to renounce the flavor of this delicious dish.
Cut the mozzarella cheese into slices about a centimeter thick (1) and dry the excess milk with a cloth (2). Take the slices of white bread and remove the edges with a knife. (3)
Spread the slices of mozzarella cheese on a slice of bread (4) and cover with a second slice pressing lightly with your hand (5). Divide the sandwich into four pieces. (6)
Immerse the four pieces in the milk (7), in the previously beaten egg with a pinch of pepper (8) and in the breadcrumbs on both sides so that the breadcrumbs are homogeneous (9). Cook for 10 minutes in an oven at 200 degrees, until the mozzarella cheese is stringy and creamy.
To prepare a perfect breaded mozzarella cheese in the oven it is better to use white bread because, compared to other products, it is less spongy and moist and therefore better supports cooking.
Pay attention to the choice of mozzarella cheese: for this recipe it is preferable not to use a buffalo mozzarella cheese since it is very rich in milk that could make your breaded mozzarella cheese too soft.
To obtain a more thick and compact breading, pass each sandwich twice in milk, egg and breadcrumbs.
