These small bacon-wrapped chicken breasts make the perfect finger food. Make them as appetizers for your guests, or for the next football game. The bacon is baked until it’s deliciously crispy and caramelized, while the chicken breast inside stays moist and tender. It’s just the right balance between salty, sweet, and smoky. But we’ll warn you, you’re going to need lots of paper napkins!
The bacon-wrapped chicken bites need 50 minutes in the oven, but prep time is short! You can make these for dinner too. It’s like chicken nuggets, but with bacon! Perfect for picky eaters. Simply serve with mashed potatoes, side salad, a dipping sauce, and you’re good to go!
Slice the chicken breasts in bite-sized pieces (about 1 inch cubes).
Mix the chicken breasts with salt, paprika, black pepper and coriander.
Carefully wrap each chicken breast piece with a strip of bacon.
Add the bacon-wrapped pieces to an oven-safe baking dish and cover.
Bake for 50 min at 400°F/200°C.
Serve with cherry tomatoes, chili peppers and parsley.
Use a thermometer to check the internal temperature of the chicken breast, it should be at least 165˚F (74˚C).
If you cook these bites uncovered, you will need to bake them for about 30 minutes, turning halfway through cooking. If they’re not crispy after half an hour, you can grill them for another 10 minutes. If you place them on a grilling rack, you don’t need to turn them halfway through cooking.
Serve the bacon-wrapped chicken bites with a variety of dipping sauces: mustard sauce, barbeque sauce, ketchup, sweet chili sauce, or even spinach and artichoke dip.
For additional caramelization, you can sprinkle the bites with brown sugar (or drizzle with honey) before baking.
You can also grill these bacon-wrapped bites. Proceed with the recipe, but instead of baking, baste the bites with barbecue/BBQ sauce. Secure each bite with a toothpick and grill for 5 minutes per side. The chicken should be cooked through and the bacon crispy!
Another variation is to make chicken poppers. Before wrapping the chicken breast with bacon, make a small pocket and add a teaspoon of cream cheese. Bake as directed in the recipe.
Streaky bacon works best with this recipe. It’s easy to wrap around the chicken breast, and has just the right amount of fat to taste delicious.
The cooked chicken bites can be stored in the refrigerator for up to 4 days (in an airtight container). Reheat them in the oven at 375°F/180°C for about 15 min until cooked through. You can also make them ahead of time and store them in a freezer. Store cooked or uncooked in the freezer for up to 2 months.
