Artichoke pizzaiola is a simple and super greedy dish, a delicious idea to bring this typical seasonal vegetable to the table: it's not only very tasty but also rich in countless beneficial substances. For this recipe the artichokes are cooked in a delicious tomato sauce, then baked in the oven with mozzarella cheese and grated parmesan cheese. The final result will be a stringy recipe which will win over the whole family, adults and children alike. You can serve artichoke pizzaiola as a second course or as a single dish, for a quick and equally satisfying dinner, with a few slices of bread to soak in the tomato sauce. How to make Artichoke Pizzaiola

Clean the artichokes. Using a special knife, peel the stem and remove the outer part (1).

Remove the tough outer leaves (2).

With a paring knife, round the top, removing the thorns, and reach the heart (3).

Cut the artichokes in half and remove the internal beard (4). As you proceed, transfer the artichokes to a bowl with cold water, acidulated with lemon juice.

Chop the onion and sauté it in a pan with a drizzle of extra virgin olive oil, add the artichokes, cut into wedges, and let flavor for a few minutes. Pour the peeled tomatoes, season with salt and continue cooking until the artichokes are soft (5).

Cut the mozzarella cheese into cubes and add them to the artichokes in a pan (6).

Sprinkle with half of the grated parmesan cheese and mix well. Pour everything into a baking dish, cover with the remaining grated parmesan cheese (7) and put it in a preheated oven at 200 degrees C for about 10 minutes, just long enough for the mozzarella cheese to melt.

When the mozzarella cheese will be well melted, take the artichokes out of the oven, garnish with a little parsley and serve very hot (8).

How to store Artichoke Pizzaiola

Artichoke pizzaiola can be stored in the refrigerator, in a special airtight container, for a maximum of 1-2 days. Before eating, heat the pizzaiola style artichokes in the oven or in the microwave oven.
