Spread this wonderful, bright zesty jam over English muffins or toast, or use it to make incredible peanut butter and jelly sandwiches. Apricot pineapple jam can even be used in sandwich cookies, added to yogurt, or enjoyed with a cheese plate. Here's how to make it.

How to Make Apricot Pineapple Jam

Grab a heavy-bottomed saucepan and pour in the water. Add in the apricots and bring the water to a boil. Once it boils, reduce the heat and let the mixture simmer away for 15 to 20 minutes, or until the apricots are ultra-tender. Mash them up (they should break apart easily), then stir in the pineapple (including the juice), grapefruit juice, and sugar. Keep simmering the mixture on low, making sure to stir often so it doesn't stick to the saucepan.

After an hour, pour the jam into your jam jars and let it cool for an hour or so. Pop the lids onto the jars and leave them to stand overnight or up to 24 hours so the jam can set. That's it! Your beautiful apricot pineapple jam is ready to use.

Should I Peel Apricots for the Jam?

Peeling apricots is a matter of preference. By the time they cook down, the skin more or less dissolves into the mash. Keeping the skin on the apricots is beneficial because it contains pectin which will help the jam to set.

Tips for Making the Best Apricot Pineapple Jam

– To sterilize the jam jars, wash them well with hot soapy water then place them in a pot of hot water and boil them for 10 to 15 minutes.

– If you want to make low sugar apricot pineapple jam, simply substitute in your favorite sweetener. However, if you swap the sugar, your jam may not set as well and may not have as long a shelf life as the sugar acts as a preservative. If you cut down the sugar or replace it with sweetener, we suggest also adding in some low-sugar pectin.

– Use fresh, fried, or frozen apricots to make your homemade jam.

– You can tell if your jam has gone bad if you see mold growing in it. If you see mold in your jam, it's past its prime and needs to be thrown out.

How to Store Apricot Pineapple Jam

Apricot pineapple jam can be kept in the fridge for up to 3 weeks or frozen for up to 1 year.

Place water and apricots in a large saucepan, bring to a boil over medium-high heat.

Once boiled, lower to a simmer and cook for 15 minutes or until the apricots are tender. Mash the apricots with a fork.
