Peel the apple and roughly grate it in to a small saucepan. Add the granulated sugar, raisins, softened butter, cinnamon powder, and water to the grated apples in the sauce pan. Place the pan over heat and let the ingredients boil in it for about 3 to 4 minutes.
Remove the pan from heat and cool the apple mixture to room temperature.
In another bowl, add flour, baking powder, baking soda, cashews, and mix everything well until nicely blended. Preheat the oven to 175 degrees F and line a muffin tray with paper liners.
Add the cooled apple mixture in to the flour mixture and blend it well until nicely combined.
Spoon the muffin batter in to the paper liners and bake the muffins for about 15 to 20 minutes. Remove the muffins from the tray from the oven, cool, and enjoy!
Make sure you move your hands in only one direction while you blend or whisk the ingredients. In case you use hand blender/whisk, again make sure that the gadget moves in one circular direction only. Maintain the baking temperature and you might need to keep a watch on the muffins in the final minutes of baking. You must get a thick muffins batter after mixing the apple and flour mixture. You may grease the paper liners a little on the inside with butter or any vegetable oil before adding the muffin batter in it.
