Recipe Tips and Notes

  1. Use a neutral oil for frying: canola, peanut, or sunflower oil are all suitable. Make sure your oil is at the right temperature (use a thermometer if necessary). If it’s too hot, the apple fritter rings will burn before it’s cooked through. If the oil is too cold, the fritters will soak up too much oil and become greasy. Also make sure that you don’t overcrowd the pain!
  2. If you’re making a large batch, your apple slices might start browning. To prevent this, you can place them in a bowl of cold water with a splash of lemon juice. If you can’t find pancake batter, you can make your own. Combine 1 ½ cups flour, 3 tbsp sugar, ½ tsp cinnamon, 1 tsp baking powder, 1/8 tsp salt in a large bowl and whisk until fully combined. Add 1 cup milk, 1 tbsp maple syrup, 1 egg, and 1 tbsp oil. Whisk until a smooth batter forms. Proceed with the recipe.
  3. For these Apple Fritter Pancakes, it’s best to use firm, tart apples. Look for Honeycrisp, Gala, Fuji or Granny Smith.
  4. You can use other fruits for these Apple Fritter Rings. Substitute the apple rings with banana, firm peach slices, and even pears.

How to store Apple Fritter Pancakes

The Apple Fritter Pancakes won’t store well (the become soggy quickly) so they are best eaten immediately! If you want to do some prep work beforehand, you can mis the pancake batter and store it in the refrigerator. Just cover the bowl with plastic wrap, making sure that the plastic covers the surface of the batter. Slice the apples and place it in a bowl of water with a splash of lemon juice (to prevent browning).
