With just a handful of simple pantry ingredients, you can make this deliciously crispy breakfast treat. It’s an easy recipe made with pancake mix, apple slices, and caramel sauce. Because you don’t need many ingredients, it’s the ideal recipe to make if you’re having over guests. Not keen on breakfast? Serve these Apple Fritter Pancakes as dessert. Simply add a dollop of fresh cream or a scoop of ice cream.
As a variation you can toss the fritters in cinnamon sugar (1/4 cup granulated sugar + 1 tablespoon cinnamon) or drizzle with dark chocolate sauce. Alternatively, you can add a glaze of icing, a cream cheese frosting.
Cut the apple into ½-inch slices.
Remove the core of the apple.
Place the apple slices on a baking parchment.
Drizzle over your caramel sauce and place in the freeze for at least 30 minutes.
Mix up a packet of pancake mix. Use kitchen tongs to dip the caramel apple slices into the pancake batter.
Fry in oil (preheated at 180°C/350F) until golden.
Flip as you fry to get an even color.
The Apple Fritter Pancakes won’t store well (the become soggy quickly) so they are best eaten immediately! If you want to do some prep work beforehand, you can mis the pancake batter and store it in the refrigerator. Just cover the bowl with plastic wrap, making sure that the plastic covers the surface of the batter. Slice the apples and place it in a bowl of water with a splash of lemon juice (to prevent browning).
