Apple butter is a fruit-only preserve. It is made by slowly and very sweet cooking of the apples which, together with a little water, ground cinnamon and a pinch of raw cane sugar, are blended with an immersion mixer. At the end the result is a thick, shiny and fat-free cream, which recalls the consistency reminds of the homonymous milk-based ingredient. Versatile and very easy to make at home, the apple butter can be used in many ways in cooking: it can be used in sweet doughs, to prepare soft and aromatic cakes, or served as a sauce for meats and cheeses; but it is so good that it can simply be spread on bread for breakfast or as a snack. So let’s find out how to prepare a perfect apple butter by following our recipe step by step.
Wash the apples, dry and peel them (1); then cut them into wedges and remove the core.
Cut each slice of apple into chunks (2) and collect them gradually in a large pot.
Add the ground cinnamon, the water (3) and then the raw cane sugar; stir, cover with a lid and cook over low heat for at least an hour.
As soon as the apples appear well cooked and slightly browned, blend them with an immersion blender (4).
Pour the hot apple butter into a previously sterilized glass jar (5).
Keep the apple butter refrigerated until ready to open and use (6).
Once in a sterilized glass jars, apple butter can be stored in the refrigerator for at least 1 month. You can also freeze it by putting it in the appropriate ice molds; in this way you will always have a small amount of apple butter ready.
