The almond paste cookies are a greedy and irresistible dessert, typical of Sicilian pastry in Italy. They are very easy to make and require just a few simple ingredients. Resting time in the refrigerator is essential in order to give them the right consistency and to be even tastier. So let’s find out how to prepare the almond paste cookies by following our recipe step by step and enjoy them as a snack with a good tea, or as a delicious end of meal for a special dinner with guests.
In a bowl, collect the almonds, add the granulated sugar (1) and blend everything with a kitchen mixer until you will get a very fine powder.
Flavor with the grated lemon zest (2).
Add the egg whites (3) and mix everything together until homogeneous.
Grease your hands with a little oil, take small amounts of the dough (about 30 grams) and form some small almond balls (4).
Put the almond balls in the powdered sugar (5) and let them rest in the refrigerator for about 2 hours.
After the resting time will be elapsed, arrange the small almond balls on a baking tray, lined with a sheet of parchment paper, and "pinch them" with your fingers, giving them the characteristic shape (6). Bake at 180 degrees C for about 12 minutes.
Take the almond paste cookies out of the oven and let them cool. Sprinkle with a little powdered sugar and serve (7).
The almond paste cookies can be perfectly stored for a couple of days, in a special airtight container, in a cool and dry place.
