Almond butter is a vegetable butter that is prepared simply by blending almonds in the mixer, blender or food processor. It is a variant of the classic peanut butter that you can enjoy on its own, on bread or biscuits, but also on sweet or savory preparations. It is a vegetable butter rich in monounsaturated fatty acids, mineral salts, vitamin B2 and vitamin E, also highly appreciated by athletes. Those who prefer can flavor the almond butter with a pinch of salt, depending on how it will be used. Preparing almond butter at home is really simple: here's how to do it in a few simple steps.
Place the almonds on a baking tray covered with baking paper. You can also toast the almonds in a preheated pan, again for 5 minutes. In any case, the almonds must be lightly toasted, otherwise they could burn.

If you use a food processor, you won't need to add oil and water because the almond butter will be smooth in just a few minutes. In our recipe we used toasted almonds with the skin, obtaining a dark brown butter. You can also use almonds without the skin, so as to obtain a lighter butter. Leave the almonds to soak in warm water for about 2 hours or in boiling water for about ten minutes. Drain them, dry them and remove the skin.
If you want to use almond butter as a breakfast spread, you can also add some raisins and dates. Almond butter can also be spread on crackers and biscuits or used to prepare cakes, smoothies, biscuits and muffins. Those who prefer can also use it to fill pancakes, waffles and crepes, using it as a delicious topping.
You can store almond butter in a clean glass jar, or in an airtight container, in the fridge for about a week.
