If you love Reese’s candies, you’ll adore these peanut butter balls. It’s an easy, no-bake candy recipe—perfect for holidays such as Christmas. With the combination of chocolate and peanut butter, they’re similar to little Reese's peanut butter cups and Buckeyes but are instead made in truffle form. It has a rich and creamy filling with a crispy, crunchy chocolate shell.
To make it, you simply mix together the filling ingredients (peanut butter, butter, icing sugar, and crushed biscuits), roll it into balls, then dip it into a mixture of melted chocolate and peanut butter. This recipe is also freezer-friendly, which means you can make a large batch and always have some candies on hand!
These peanut butter balls are not too different from Buckeyes. Buckeyes are a well-known candy from the state of Ohio. And while they might look like ‘buck eyes’, the name actually refers to a state tree that produces nuts looking just like its namesake candy.
Traditionally buckeyes are made with icing sugar and smooth peanut butter and rolled into balls. It’s then only partially dipped into chocolate so that a piece of the peanut butter sticks outs.
These peanut butter balls are slightly different in that the filling also contains crushed cookies, which gives it more of a truffle texture. It’s also completely covered with chocolate.
Peanut butter – for this recipe, it’s best to use smooth (or creamy) peanut butter as the nuts in chunky peanut butter might interfere with the rolling. If, however, you prefer more texture, feel free to use them. Avoid natural peanut butter, as it’s too oily for this recipe.
Butter – salted butter is best, but unsalted butter will also work (just add a pinch of salt to the filling!)
Icing sugar – also known as powdered sugar or confectioner’s sugar, don’t substitute with another sugar as it will make the filling gritty
Biscuits – adds texture to the filling; use any of your favorite cookies (Oreos, Graham Crackers or Nilla wafers will all work.
Chocolate – use any chocolate chips or baking choco0late suitable for melting.
Make the peanut butter filling. Add the crushed biscuits, icing sugar, and butter to a large mixing bowl and mix well. You can use an electric mixer or whisk by hand.
Create the balls by scooping out a bit of the peanut butter filling and rolling it with your hands. An ice cream scoop might make this task easier!
Place the balls on a plate and transfer them to the freezer for at least 20 minutes. (The balls can be made the night before and stored in the freezer).
Melt the chocolate by placing the chocolate chips and peanut butter in a microwave-safe bowl, and microwave in 30-second increments for a total of 2 minutes
Remove the balls from the freezer and deep each ball into the chocolate mixture to cover them completely with chocolate.
The balls could be very sticky depending on the weather (if it’s humid), or the ingredients (peanut butter might contain more oil). If the mixture is too sticky to roll, add a few tablespoons of icing sugar to the mixture until it rolls more easily. You can also grease your hands slightly with cooking oil spray.
Feel free to use other nut butters for this recipe: almond butter, cashew butter, or macadamia butter will all work well.
It’s important to chill the ball properly before dipping it into the chocolate, otherwise the balls won’t keep their form and the chocolate won’t set.
Instead of salt, you can also sprinkle these peanut butter balls with chocolate vermicelli or rainbow sprinkles (“funfetti”). Chopped chocolate or crushed peanuts will also be delicious!
To make them gluten-free, leave out the crushed cookies, or use a gluten-free cookie.
Add instant oats for more texture.
For a ‘naked’ peanut butter ball, leave out the chocolate completely!
