Dinner is an important meal that can comfort you after a grueling day. But there are so many options you can choose from; sometimes it gets overwhelming even to decide. Below are two great dishes that make for comforting dinner foods when you need a home-cooked meal.

Melt-in-Your-Mouth Chuck Roast

Chuck roast recipes are great, and a slow-cooked recipe is even better. You’ll love how flavorful and tender beef chuck roast is.

Ingredients you’ll need

  • 1 can (14-1/2 ounces) Italian stewed tomatoes, undrained
  • 1/2 cup beef broth
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 4 teaspoons prepared mustard
  • 3 garlic cloves, minced
  • 1 tablespoon soy sauce
  • 2 teaspoons pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 large onion, halved and sliced
  • 1 medium green pepper, halved and sliced1 celery rib, chopped
  • 1 boneless beef chuck roast (2 to 3 pounds)
  • 3 tablespoons cornstarch
  • 1/4 cup cold water

Directions

  1. Mix the first 10 ingredients. Put some onion, green pepper and celery in a 5-qt. slow cooker; place roast over top. Pour tomato mixture over the roast. Cook, covered, on low heat until meat is tender, 5-6 hours.
  2. Remove the roast. Strain the cooking juices while making sure to reserve the vegetables. Transfer juices to a small saucepan, then skim fat. Mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir until thickened, 1-2 minutes. Serve roast and vegetables with gravy.

Beef and Mushrooms with Smashed Potatoes

Nothing spells comfort better than a classic dish of beef and mushrooms. Even better, this comes with a side of crispy smashed potatoes.

Ingredients you’ll need

  • 1-1/2 pounds red potatoes (about 6 medium), cut into 1-1/2-inch pieces
  • 1 pound ground beef
  • 1/2 pound sliced fresh mushrooms
  • 1 medium onion, halved and sliced
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon pepper, divided
  • 1/2 teaspoon salt, divided
  • 1 can (14-1/2 ounces) beef broth
  • 2 tablespoons butter, softened
  • 1/2 cup half-and-half cream
  • 1/2 cup french-fried onions

Directions 

  1. Put the potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce the heat to medium and cook, uncovered, until tender. This should take 10-15 minutes.
  2. Meanwhile, in a large skillet, cook and crumble beef with mushrooms and onion over medium-high heat. Do this until the beef is no longer pink. This requires 6-8 minutes then you drain. Next, stir in flour, 1/2 teaspoon pepper and 1/4 teaspoon salt until blended. Gradually stir in broth and bring to a boil.
  3. Lower the heat; simmer, uncovered, until thickened for about 5 minutes while stirring occasionally. Afterwards, drain the potatoes and return them to the pan. Now you want to mash your potatoes to the desired consistency, adding butter, cream and the remaining salt and pepper. When it’s done, serve some spoonfuls into bowls; top with beef mixture and garnish with fried onions.
